Then I’m proud to introduce the culinary concept of Chef Biro Boldizsar of Beterv, the first perfume chef I have ever met.
A perfume maker and a chef by passion, he combines both to create a rare, one-of-a-kind experience. He generally boasts a Hungarian kitchen with unique international influences. Chef Biro does not operate a regular restaurant. Instead he only opens a few scent dinners a month where he caters to special events such as special company and private parties. He figures that he wants keep the culinary art a passion rather than a job, which is what could happen if he opens up a regular restaurant. Therefore, his service as a perfume chef would continue to feed his passion as he bear witness to all the positive experiences from his customers.

When we came into his restaurant in the heart of the city, which was essentially a contemporary studio apartment that’s been renovated to accommodate a small party while equipped with a large, open and modern kitchen, he invited us over to the counter to engage in conversation as he prepares our dishes. Chef Biro is quite charming as he is welcoming.
He shared with us his experiences during the Soviet occupation. It was only the year of 1989 which ended the Soviet occupation of Hungary after all. That’s not a long time ago. He recalled the rationing they had to go through and the memories of hunger during that time. This contributed to his passion towards being a perfume chef. He even laughed about the situation he was in during our dinner with him. He stated that if someone were to tell him 20 years ago that he would be serving scent dinners to a couple of Filipino-Americans from Los Angeles living in the UK, he would have laughed at the absurd thought. His inspring personal story certainly evokes how achieving your dreams through passion and determination can most certainly turn your life around.
The dishes that we enjoyed were spectacular on their own. The novelty experience would be the exceptional combinations of perfumes he would introduce prior to setting the dishes in front of us. One by one, he would have us smell a sliver of perfume scent then taste the dish. Much like how we smell wine before drinking it, smelling the perfume will mentally prepare us in eating the food. The particular scent will help us focus on the play of ingredients that Chef Biro presented to us in each dish. It was quite a heavenly experience when combining scent and taste for the very first time. I’ve never experienced food delivered in such an innovative way. It was like a beautiful mind explosion, really. Fortunately, I can share the photos I took of the exquisite and delicious dishes we got to enjoy.
