Whenever I travel, I always look for that extraordinary destination restaurant that brings authenticity to my holiday.
Perhaps it is one with a concept, or possibly an exceptional menu, or even one that headlines unparalleled views. It is very rare to bring in a gastronomic experience that encompasses all these. For this reason, when I encounter such establishment, I need to pay tribute to it so others may discover and chance upon it too.

Such is how I feel about this restaurant by the Petanu river gorge in Viceroy Bali, conveniently in the resort where I stayed in Ubud. CasCades Restaurant roosted atop the Valley of the Kings, much like the rest of the villas in Viceroy Bali, is positioned to captivate its every guest. Featuring a sweeping and scenic view of the nearby Ubud rainforest, I knew I was in for a remarkable and memorable meal.
At sunset, I entered the Balinese style architecture sheltering the romantic CasCades Restaurant. The setting was dreamlike. The landscape was like a painting framed by Balinese terraces illuminated by idyllic, glowing candles. My love affair for the Viceroy Bali rose up and I found myself feeling ever so blissful.
Without further adieu, my appetizers came and it arrived in the prettiest of plates. The soft, creamy, Seared Scallops were phenomenal featuring both cold and warm temperatures together leaving a wonderful tingling sensation in my palette.
I am quite fond with tomatoes and was gratified to see a plate of Tomato Folies garnished with Parmesan Panna Cotta.
A palate cleanser featuring a coconut sorbet was brought in right before the mains arrived and I thought that was a lovely touch.
For the main course, I found the perfectly pink Tasmanian Salmon with Potato Confit soft and juicy on the inside and wonderfully crusty on the outside.
Next came the Spanish Iberico Pork with creamy mashed potatoes, black kale and mustard leaves perfectly cooked like beef.
As a climax to it all, a delectable Australian Wagyu Beef graced my table in the most perfect medium pink color.
To say that I was having a fine time was definitely an understatement. The entire evening was first-class and I couldn’t wait for my dessert.
Haute cuisine is certainly one of my favorite types of concepts in gastronomy and I was thrilled to see a plate of deconstructed mint chocolate with Madagascar chocolate mousse and Grenada chocolate crumble on my table after my palate was once again cleansed by banana fritters with caramel.
The beautiful lime merengue arrived shortly whose charisma not only caught my eye but my taste buds as well.
Lastly, a classic dark ganache chocolate with vanilla ice cream sealed the deal.
